Cooking Our History
El Señorío de Sulco was born from a clear mission: to rescue the authenticity of Peruvian Creole cuisine and turn it into a living expression of our identity.
It was on July 16, 1986, that Isabel Álvarez and her mother, Julia Novoa, opened the doors to this dream in the heart of Surco’s traditional district. In that charming, village-like setting of grapevines, Sunday parades, and festive gatherings, a legacy began to take shape — one that would stand the test of time. In just seven years, that first house became the birthplace of a culinary philosophy: to recover, revalue, preserve, and innovate the flavors of Peru, without ever losing their essence.
Isabel, a sociologist, communicator, and passionate researcher of Peruvian gastronomy, together with Julia — a woman of strong character and generous seasoning — laid the foundations of a restaurant that didn’t just serve food, but told stories.
Stories slowly simmered, like the ones our grandmothers once cooked.
In 1992, El Señorío de Sulco moved to its new home in Miraflores, facing the sea. Since then, Lima has revealed itself through its wide windows, while the soul of Creole flavor continues to arrive at the table with the same passion as always.
Today, the legacy lives on through chef Flavio Solórzano, the third generation of a family of cooks. Heir to this deep commitment, Flavio brings research, technique, and a creative vision that honors tradition while embracing reinvention. His cuisine is memory — but also very much the present.

Flavio Solórzano
Flavio Solórzano is much more than the chef at El Señorío de Sulco; he is the third generation of a family that has made Lima’s Creole cuisine their way of life. Son of Isabel Álvarez and grandson of Julia Novoa, he carries in his hands the living heritage of a tradition simmered slowly through history, research, and family affection.
Trained through hands-on experience from a young age, Flavio grew up beside the stove with his grandmother Julia, who took him to the market and taught him to identify ingredients with respect and sensitivity. With her, he learned that cooking begins long before stepping into the kitchen.
Flavio has skillfully integrated the culinary legacy he inherited with a contemporary vision — one that honors tradition while also reimagining it. He has specialized in Peruvian cuisine, pastry, and artisanal ice cream, building a solid and thoughtful proposal that blends technique, memory, and creativity.
From a young age, he has represented Peru in major gastronomic events across the Americas, Asia, and Europe, proudly sharing our flavors with the world. He is a Marca Perú ambassador and the author of “Ayara, Madre Quinua” (Santillana), a pioneering publication with an interdisciplinary approach that revalues this ancestral grain through the lens of cuisine, history, and culture. Flavio cooks with deep roots — but also with his eyes set on the future.
Today, he leads the culinary vision of El Señorío de Sulco with passion, precision, and a profound love for Peru.
